Mixed Vegetable Stew

Serves 5 to 6

Ingredients

  • 3 Tbsps. Vegetable Oil
  • 3 medium onions, chopped
  • 2 cloves garlic, finely chopped
  • 1 cup Tomatoes, chopped
  • 4 medium Carrots, diced
  • 5 Potatoes cut into ¾ inch pieces
  • 2 cups green peas
  • 2 MAGGI Cube Fortified
  • 1 bunch Coriander Leaves, chopped

Preparation

  1. In a large pot, heat oil and sauté onions and garlic until golden brown.
  2. Add tomatoes and cook until the sauce is thickened
  3. Add carrots, potatoes and peas. Crumble in MAGGI cube Fortified. Stir well until all is covered by sauce.
  4. Add water be the level around 2/3rd depth on the vegetables.
  5. Reduce the heat. Simmer until vegetables are well done. Taste & adjust the seasoning.
  6. Pour into a serving dish & Garnish with fresh coriander leaves.
  7. Serve with steamed rice or chapatti.
