Chilli Garlic Bean Burritos

Serves 4

Ingredients

  • 450g can red kidney beans, rinsed and drained (or preboiled)
  • 1 onion, finely chopped
  • 2 tbsps. Oil
  • 2 MAGGI Cube Fortified
  • 1 tsp cumin
  • 1 tsp coriander
  • 4 tomatoes, pureed
  • 2 tbsps. tomato paste
  • 2 tbsps. MAGGI Chilli Garlic Sauce
  • 8 flour tortillas
  • 4 x lettuce leaves , shredded
  • 1 large tomato, diced
  • 1/2 cup grated reduced-fat cheddar cheese
  • 1/3 cup low fat natural yoghurt

Preparation

  1. Heat oil in a sauce pot, sauté onions until golden brown, add tomato paste and fry shortly. Add the pureed tomatoes, cumin, and coriander cook until soft.
  2. Add beans, MAGGI cube Fortified and MAGGI Chilli Garlic Sauce. Bring to the boil; reduce heat and simmer for 4 minutes or until thickened slightly.
  3. To serve, divide filling between tortillas; roll, then top with lettuce, tomato, cheese and yoghurt.
