Cassava Leaves In Coconut And Peanut (Matapa)

Serves 4


  • 1/2 kg fresh, young cassava leaves, pounded
  • 3 cloves garlic, crushed
  • 1 large Onions, finely chopped
  • 3 MAGGI cube Fortified
  • 2 Tbsps. oil
  • 1 cup seafood, chopped
  • 1/2 cup peanut butter
  • 1 1/2 cup coconut milk


  1. Boil cassava leaves with garlic till cooked approximately half an hour.
  2. Heat oil in a separate sauce pan and sauté onion over medium-low heat until translucent.
  3. Add the chopped seafood, peanuts, coconut milk, and MAGGI cube Fortified. Keep stirring and simmer for 5 minutes.
  4. Add boiled cassava leaves and mix well. Cover tightly and simmer until the leaves are withered and peanut is cooked. Approximately 15 minutes. Taste & adjust the seasoning
  5. Serve with cooked white rice or xima (maize meal)
