Fried Banana


  1. 1 egg – separated
  2. 125ml (½ cup) water
  3. 15ml (1 Tbsp) melted butter
  4. 125ml (½ cup) cake flour
  5. 30ml (2 Tbsp) castor sugar
  6. 4 bananas – cut into 1.5–2cm slices
  7. Oil for deep-frying
  8. Icing sugar and lime/lemon wedges for decoration


  1. Combine egg yolk and water. 
  2. Add butter and mix with flour and sugar to form a smooth batter. 
  3. Gently fold batter into stiffly beat egg white. 
  4. Dip banana slices into batter and deep-fry in oil until golden brown.
  5. Drain well. 
  6. Dust with icing sugar and serve immediately with hot Caramel Cinnamon Sauce and lime/lemon wedges on the side.
