Pineapple Cheese cake

Serves: 6-8


  1. 1 packet of biscuits, crushed
  2. 100g butter, melted
  3. 250g creamed cottage cheese
  4. 1 can of Nestlé Sweetened Condensed Milk
  5. 1 can (440 g) crushed pineapple, drained (reserve juice)
  6. 10ml (2 tsp) grated lemon rind
  7. 60ml (¼ cup) lemon juice
  8. 2 eggs
  9. 5ml (1 Tbsp) custard powder
  10. Whipped cream for decorating if desired


  1. Preheat oven to 150° C.
  2. Combine crushed biscuits and butter and press into the base of a 20cm springform pan.
  3. Chill.
  4. Blend cottage cheese and Nestlé Condensed Milk and mix well.
  5. Add half the pineapple to the mixture with the eggs, lemon rind and juice.
  6. Mix well.
  7. Pour into biscuit base and bake for 30 minutes. Switch off the oven and allow to cool in the oven.
  8. Chill in refrigerator.
  9. Place remaining pineapple and reserved juice in a small saucepan and whisk in the Custard Powder.
  10. Cook until mixture has thickened.
  11. Cool slightly and spread on top of cheesecake.
  12. Decorate with whipped cream if liked.
